摘要
在哈密瓜冷藏运输过程中,多存在夜间关闭预冷装置而采用自然通风的现象。通过模拟上述冷藏车预冷的方式,研究这种持续性预冷和间歇性预冷对哈密瓜货架期的影响。结果表明:间歇性预冷加速了可溶性固形物含量的降低;间歇性预冷环境下哈密瓜的失重率比持续性预冷环境下高,最高时单瓜每2 d失重率增加0.7%;间歇性预冷乙烯释放的高峰期比持续性预冷的高峰期提前了6 d。因此在哈密瓜冷藏运输过程中任意停止预冷装置、打开冷库门将缩短哈密瓜的货架期。
In the process of Hami melon preservation and transportation, shutting down precooling devices during the night and adopting the method of natural ventilation to keep fresh often occured. The effect of persistent precooling and intermit- tent precooling on the shelf life of Hami melon by simulating the refrigerator car precooling were studied. The results showed that the intermittent precooling accelerated the decrease of total soluble solids and increased weightlessness rate, the highest weightlessness rate of single fruit increased by 0.7% every two days, the ethylene releasing peak under intermittent precool- ing was six days in advance. Therefore, in the process of Hami melon preservation and transportation, stopping precooling de- vice and opening the refrigerator door will shorten the shelf life of Hami melon.
