摘要
目的了解沈阳市各类食品中主要的食源性致病菌污染情况及其变化趋势,为食品安全风险评估及预警提供依据。方法依据2011-2014年《国家食源性致病菌监测工作手册》要求,随机抽取15类、970份样品进行食源性致病菌的监测。结果在监测的970份样品中,检出食源性致病菌株93株、总检出率为9.6%;副溶血性弧菌检出率最高,为11.3%;熟肉制品类食品致病菌检出率最高,为21.8%。采自农贸市场食品致病菌检出率最高,为14%;散装食品检出率最高为14.9%。结论沈阳市市售的食品存在食源性致病菌的污染,主要致病菌为副溶血性弧菌和蜡样芽胞杆菌。熟肉制品、动物性水产及其制品是高风险食品;农贸市场及网店出售的食品致病菌污染较严重;散装食品安全风险高。应加强对重点致病菌、重点时段、重点食品、重点食品消费场所的监测与监管,控制食源性疾病的发生。
[Objective]To analyze the contamination status of main foodborne pathogens in food in Shenyang City, explore its change trend, and provide basis for food safety risk assessment and early waming.[Methods]In accordance with the requirements of the National manual for monitoring of food borne pathogens (2011-2014), 970 samples of 13 categories of foods were randomly selected for food borne pathogen monitoring.[Results]Among 970 samples, 93strains of food borne pathogens were detected, with the total detection rate of 9.6%. The detection rate of Vibrio parahaemolyticus was the highest (11.3%). The detection rate of pathogens in cooked meat was the highest (21.8%). The detection rate of pathogens in food from farm product markets was 14%, and the detection rate of pathogens in unpacked food was 14.9%.[Conclusion]The contamination from foodbome pathogens has been found in commercially available food in Shenyang Citym and main pathogens are Vibrio parahaemolyticus and Bacillus cereus. The cooked meat, and animal aquatic products are the high-risk foods, and the contamination of foodbome pathogens in foods from farm product markets and online stores is serious, while the unpacked food show high risk. It is necessary to strengthen the monitoring and management in key foodborne pathogens, key period, key food and key food consumption place, to control the foodborne disease.
