摘要 以鸡胸软骨为原料,在出品量1t的全自动化生产线上大规模生产胶原蛋白,并对成品进行测定分析。结果表明:此工业化生产工艺可行,所得Ⅱ型胶原蛋白产品在感官上好于国内外同类产品,每100g产品中胶原蛋白含量(以干基计算)达63.6g,另含有59.23g低聚肽,35.7g硫酸软骨素,517mg钙,脂肪含量为0。经测试产品胶原蛋白的平均分子量为745Da,羟脯氨酸含量为8.26g/100g。 The chicken breast cartilage was taken as raw material. Collagen was mass produced on an automatic line which could produce one ton collagen each batch. The products were measured and an- alyzed. The results showed that this industrial processing technology was feasible. The produced collagen products had better sensory quality than similar products at home and abroad. The collagen content (in dry basis) could reach up to 63.6g per 100g product. And there were also 59.23g oligopeptide, 35.7g chondroitin sulfate, 517mg calcium and 0 g fat in it. In the tested products, the average molecular weight of collagen was 745 Da. And the content of hydroxyproline in it was 8.26g per 100g.
