摘要
目的了解江苏省流动早餐中食源性致病菌污染情况,为流动早餐卫生监督管理提供基础资料和科学依据。方法2013年在江苏省南京、徐州、常州、镇江、泰州、宿迁6个省辖市共采集307份流动早餐样品,按照《2013年国家食品污染和有害因素风险监测工作手册》中微生物检验方法的标准操作程序,对其中的金黄色葡萄球菌、单核细胞增生李斯特菌、沙门菌、蜡样芽孢杆菌进行检测。结果所采集307份流动早餐样品中未检出单核细胞增生李斯特菌和沙门菌,金黄色葡萄球菌阳性率为1.0%,蜡样芽孢杆菌阳性率为5.2%。经卡方检验,正规早餐点和无证早餐点食源性致病菌阳性率差异无统计学意义(χ^2=1.10,P=0.273);夹心类早餐如杂粮煎饼、手抓饼中致病菌阳性率最高,达18.2%。结论江苏省流动早餐中存在食源性致病菌污染,应引起足够重视并加强监管。
Objective To investigate the food- borne pathogens contamination status of takeaway breakfast in Jiangsu,so as to provide fundamental material and scientific basis for the hygiene administration of takeaway breakfast. Methods On the basis of standard operating procedures for microbiological inspection methods according to National Food Contamination and Hazardous Factors Risk Monitoring Manual in 2013,we collected 307 takeaway breakfast samples from 6 cities( Nanjing,Xuzhou,Changzhou,Zhenjiang,Taizhou,Suqian) in Jiangsu in 2013 to detect Salmonella,Staphylococcus aureus,Bacillus cereus and Listeria monocytogenes. Results The positive rate of Staphylococcus aureus was 1. 0%,and that of Bacillus cereus was 5. 2%,Listeria monocytogenes and Salmonella were not found in the 307 takeaway breakfast samples. The positive rates of samples from normal places and places without a license had no statistical significance on the differences( χ~2= 1. 10,P = 0. 273). The positive rate of sandwiched breakfast( cheese cake,shredded cake) was the highest,as up to 18. 2%. Conclusion Food- borne pathogens contamination in takeaway breakfast does exist,which should be paid attention to strengthen monitoring and management.
