摘要
目的了解咸阳市市售部分食品真菌毒素的污染状况。方法分层随机抽取样品,不同样品进行有针对性指标的检测,将监测结果与国家标准限值进行对照,并进行统计学分析。结果共抽检样品63份,合格率为100.0%。不同食品中污染的主要真菌毒素不同,小麦粉和燕麦中分别为DON和3A-DON;玉米粉中为伏马菌毒素B1和玉米赤霉烯酮;花生油和玉米粉中为黄曲霉毒素(AFB1、AFB2);调料粉中为黄曲霉毒素(AFB1、AFB2、AFG1)。不同食品间真菌毒素检出率比较:谷物及其制品与花生油之间,差异无统计学意义(P>0.05);调料粉与谷物及其制品和花生油之间,差异均有统计学意义(P<0.05)。谷物及其制品和调料粉中,散装包装和定型包装,差异均无统计学意义(P>0.05)。结论本市该6种食品真菌毒素污染状况相对较好,但根据检出率监测结果看,需要引起关注,应加强对这几类食品的监督管理,引导公众正确消费。
Objective To understand the contamination status of mycotoxins in some foods sold in Xianyang city. Methods Different random stratified samples were collected for the detection of targeted indicators,and the monitoring results were compared with the national standard limit value for statistical analysis. Results A total of 63 samples were selected to test,and the qualification rate was 100. 0%. The main mycotoxins in different food contaminations were DON in wheat and 3A- DON in oats; fumonisin B1 and zearalenone in maize,AFB1 and AFB2in peanut oil and corn flour,AFB1,AFB2 and AFG1in savor flour respectively. The detection rates of mycotoxins in different foods were compared. The difference between the grains products and peanut oil was not statistically significant( P〈0. 05); and that among savor flour and grains,savor flour and peanut oil were significantly significant( P〈0. 05),and that between grains and its products and savor and its flour were all not statistically significant,as well as the difference between bulk and stereotypes package( P〈0. 05). Conclusion In this city,the fungus toxin contamination status of this 6 kinds of foods is relatively good,but according to the results,we should pay more attention to strengthen the supervision and management of these food,and guide the public consume correctly.
