温州市龙湾区食品中金黄色葡萄球菌及沙门菌的检测分析 被引量:2

Detection and analysis of Staphylococcus aureus and Salmonella in Longwan district of Wenzhou

摘要 目的了解温州市龙湾区食品中金黄色葡萄球菌及沙门菌的污染状况,并探讨污染原因,为龙湾区由金黄色葡萄球菌及沙门菌引起的食源性疾病的可能性作出预测或预警。方法采集2013年4月-12月本地具有一定代表性的样品,共计6类540份,依据GB 4789—2010进行沙门菌、金黄色葡萄球菌的检测。结果 540份样品中检出金黄色葡萄球菌31株,沙门菌2株,总检出率为6.11%。食品类别以熟肉制品检出率最高,为11.86%,其次为凉拌菜(7.50%)、地方特色食品(鸭舌)(2.50%)。采样地点以农贸市场检出率最高,为10.00%,其次为路边摊点(6.67%)、酒店或饭店(5.00%)、学校周边移动售卖点及学校周边小餐馆(3.33%),大中型超市及冷饮店未检出。结论龙湾区市售食品存在金黄色葡萄球菌及沙门菌的污染,应加强食品卫生管理,减少食源性疾病的发生。 Objective To understand the pollution status of Staphylococcus aureus and Salmonella in food in Longwan district of Wenzhou,and to explore the causes of pollution,in order to forecast and warn the possibility of food borne illness caused by Staphylococcus aureus and Salmonella in Longwan district. Methods Local representative samples were collected during April-December,2013. All the 6 classes of 540 representative samples were collected in the local area,and tested for both Salmonella and Staphylococcus aureusaccording to GB 4789—2010. Results 31 strains of 540 samples were tested positive for Staphylococcus aureus. 2 strains were tested positive for Salmonella. The total positive detection rate for pathogens was 6. 11%. In all the food classes,the highest detection rate of the cooked meat products was 11. 86%,followed by the cold dishes( 7. 50%) and the local characteristic food( duck tongue)( 2. 50%). In all the sampling sites,the highest detection rate was the farmers market with 10. 00%,followed by the roadside stalls( 6. 67%),hotels or restaurants( 5. 00%),school peripheral mobile points of sale and the small restaurants around school( 3. 33%),and were not detected in the large and medium-sized supermarkets and stores. Conclusion The commercial foods in the market were polluted by Staphylococcus aureus and Salmonella in Longwan district,and we should strengthen the management of food hygiene,and reduce the incidence of food borne disease.
