一株产广谱高效抑菌活性细菌素植物乳杆菌的筛选与鉴定 被引量:3

摘要 为获得产广谱高效抑菌活性细菌素的乳酸菌,采用agar-spot-test法、琼脂扩散法结合生理生化和16SrDNA序列同源性分析法从贵州传统发酵食品中分离、筛选、鉴定乳酸菌并对其产生抗菌物质的生理生化特性进行鉴定。结果表明:从贵州传统发酵食品中分离出乳酸菌110余株并从中筛选出效果最好的菌株416,鉴定该菌株为植物乳杆菌(Lactobacillus plantarum),其产生的抑菌物质为多肽类,对蜡样芽孢杆菌和李斯特菌有较强的抑制作用,具有作为生物防腐剂应用于食品行业的潜力。 L.plantarumstrains were screened from Guizhou traditional fermentation food by agar-spottest,then the L.plantarumstrain with the best bacteriostatic effect was screened by agar diffusion method and finally the antibiotic substance of the L.plantarum strain screened by physiological and biochemical identification and 16 SrDNA sequence homology analysis was identified to obtain L.plantarumstrains with efficient broad-spectrum bacteriostatic activity.Results:110 L.plantarum strains are screened from Guizhou traditional fermentation food and stain 416 with the best bacteriostatic effect is screened from 110 L.plantarumstrains.The antibiotic substance produced from stain 416(L.plantarum)is polypeptide,which has the strong inhibition effect on Bacillus cereus and Listeria monocytogenes and can be used as a biological preservative in food industry.
