摘要
为了调查天津地区市售动物性食品肉、蛋、奶中的硒含量,试验采用氢化物-原子荧光光度法对170份样品中硒含量进行了测定。结果表明:动物性食品中硒含量最高的是猪肝脏,与其他动物性食品具有显著性差异(P<0.05);其次是猪肉(0.238 0 mg/kg)、牛肉(0.221 0 mg/kg)、鸡肉(0.200 4 mg/kg),羊肉中硒含量(0.078 3 mg/kg)低于其他肉类食品,但无显著性差异(P>0.05);禽蛋类硒含量无显著性差异(P>0.05),但较高的是白皮鸡蛋(0.309 2 mg/kg),其次是红皮鸡蛋(0.268 9 mg/kg),鸭蛋最低(0.213 1 mg/kg);牛奶中的硒含量显著低于其他动物性食品(P<0.05);河北区动物性食品中硒含量显著高于其他市辖区内的动物性食品(P<0.05),南开区、汉沽区、西青区、河西区之间差异不显著(P>0.05)。说明不同的动物性食品中硒的含量不同,人们可通过调节饮食习惯而满足身体对硒的需求。
To investigate the selenium content in animal foodstuffs in Tianjin City, including meats, eggs, and milk, a hydride -generation atomic fluorescence spectrometry was applied to determine the selenium content in 170 samples. The results showed that the selenium content in pig livers was highest among animal foodstuffs, and there was a significant difference ( P 〈 0.05 ) in the selenium content compared with other animal foodstuffs, followed by in pork (0. 238 0 mg / kg), beef (0. 221 0 mg/ kg), chicken (0. 200 4 mg / kg), while the selenium content in mutton (0. 078 3 mg / kg) was lower than that in other meat foods, but there was no significant difference ( P 〉 0.05 ). There were no significant differences ( P 〉 0.05 ) in the selenium content among poultry eggs, and the selenium content in white - shell eggs (0. 309 2 mg / kg) was higher than that in other poultry'eggs, followed' by in red - shell eggs (0. 268 9 mg / kg) , and .the selenium content in the duck eggs (0.213 1 mg / kg) was lowest. The selenium content in milk was significantly lower ( P 〈 0.05 ) than that in other animal foodstuffs. The se- lenium content in animal foodstuffs in Hebei District was significantly higher( P 〈 0.05 )than that in other municipal districts, and there were no significant differences (P 〉 0.05 )in the selenium content in animal foodstuffs among Nankai District, Hangu DistriCt, Xiqing District, and Hexi District. The results indicate that the selenium content in different animal foodstuffs is different, and people can meet the body's demand for selenium by adjusting eating habits.
