摘要
以云南主要产茶区2012年乔木古树为原料,利用HPEF的生物效应,对普洱生茶醇类香气进行了实验研究。利用电子鼻对样本香气成份进行检测。通过提取醇类香气的原始数据并处理分析,结果表明茶叶在18k V/120Hz/45min条件下醇类香气的含量增加了21.8%。利用电子鼻自带软件Winmuster对醇类香气的数据进行主成分(PCA)、线性判别(LDA)和传感器区别贡献率(Loadings)的分析,并对实验结果进行正交试验分析。结果表明:HPEF促进茶叶醇类香气的优化条件为12k V/120Hz/30min,影响醇类香气的主要因素是时间,电压因素的影响有限;
Using biological effect of HPEF, the alcohols aroma of 2012-year-arber trees (No. 1 tea) from major tea area in Yunnan was researched by electronic nose. Through disposing and analyzing the original data, the result showed the alcohols aroma content of tea increased by 21.8 % under the condition of 18kV/120Hz/45min. Using principal component analysis ( PCA), linear disoriminant analysis(LDA), the difference contribution rate of sensor analysis (Loadings) of Winmuster software, and combining with the analysis of orthogonal experiment, the final results demonstrated that tea alcohols aroma could be improved under the condition of 12kV/120Hz/30min, and compared with voltage, time was the main factor.
