玉米产业链真菌毒素污染防控管理体系构建

摘要 真菌毒素是真菌的次生代谢产物,其污染玉米可导致重大健康危害和经济损失。多种策略可用于控制玉米产业链真菌毒素污染,建立玉米产业链的质量控制体系,实施产业链的持续管理最有效。因此,应根据HACCP原理确定玉米产业链的关键控制点;结合产业链的良好操作规范,构建预防为主的玉米产业链的真菌毒素污染防控管理体系。 Mycotoxins, secondary fungal metabolites, can contaminate maize and pose a serious economic and health threat worldwide. Among many strategies to minimize the mycotoxin contamination in maize industry chain, constructing the mycotoxin prevention and control system along the food chain and implementing sustainable management is the most feasible one. This paper identifies the affecting factors and summarizes the prevention and control strategies, including the definition of the critical points in maize industry chain on the basis of HACCP principle and the construction of mycotoxin prevention and control system with good manufacture procedure.
