摘要
试验以红豆、糙米为原料,研制一种营养保健复合谷物饮料。通过单因素试验确定糙米的糊化温度为90℃,糊化时间为25 min,复合乳化稳定剂组合为CMC 0.2%,海藻酸钠0.6%,PGA 0.2%,单甘脂0.4%。正交试验优化复合谷物饮料配方为红豆添加量8%,糙米添加量12%,木糖醇添加量0.015%,白砂糖添加量6%。产品风味独特,口感细腻,稳定性良好。
Azuki bean and brown rice were used to develop a nutritional health beverage. Employing single-factor experiment found the pasting temperature of brown rice was 90 ℃, pasting time was 25 min, composite emulsion stabilizer composed of 0.6% sodium, 0.2% PGA and 0.4% trimetric ester. Optimize the formulation of composite grain beverage by orthogonal array design and the results showed that quantity of azuki bean was 8%, brown rice 12%, xylitol 0.015%, white sugar 6%. The product exhibited a unique taste, excellent flavor and good stability.
