摘要
蜂蜜因其营养价值高,深受人们欢迎。然而,市场上经常出现掺假蜂蜜和品种混杂蜂蜜,降低蜂蜜质量。如何快速、准确检测蜂蜜品质是亟待解决的问题,快速检测技术引起人们的关注。综述电子鼻技术、质构技术、近红外光谱技术、差热分析技术、高光谱技术和色差技术等快速检测技术在蜂蜜掺假检测和品种辨别中的应用,分析了其各自的优缺点,并展望了快速检测技术在未来蜂蜜品质检测中的前景。
Honey is popular for its rich nutrition. However, adulterated honey and mixed breeds honey on the market reduce the quality of honey. It is the key problem to detect the quality of honey quickly and accurately. Rapid detection technology is emphasized. Review the application of some rapid detection technologies on honey adulteration detection and species identification, such as the electronic nose, texture technique, near infrared spectroscopy, differential thermal analysis technology, hyperspectral technology and color technology. The advantages and disadvantages of these techniques are analyzed, and the future application of rapid detection technology on honey quality testing is expected.
