摘要
SO_2在枸杞果酒生产过程中扮演重要角色,通过实验研究枸杞果酒中SO_2变化动态,应用直接碘量法测定酒体中游离态和总二氧化硫测变化趋势。经研究发现,枸杞果酒在发酵过程中,游离态二氧化硫呈递增趋势,陈酿、下胶过程中呈减少趋势;而总二氧化硫呈现先增后递减的趋势。通过对实验结果的讨论,分析出现此种趋势的可能性原因,对枸杞果酒生产有重要的参考意义。
SO_2 play an important role in the process of Chinese wolfberry wine production,Through experimental study in the SO2 dynamic change of Chinese wolfberry wine,Using the method of direct iodometric titration to detect the free and total sulfur dioxide changing trends.Through the study found that,during the fermentation of Chinese wolfberry wine, free sulfur dioxide showed increasing trend,but showed a trend of decrease in the process of aging and fining; However, total sulfur dioxide showed a trend of decline after the first increase.Discuss the results of experiments,and analyze possible reasons for these trends,has important reference significance for Chinese wolfberry wine production.
