摘要
食物过敏对人类的危害日益增加,其中海产品过敏所占比重较高,对机体的肠道黏膜免疫系统造成紊乱。本文系统介绍了海产品主要过敏原的表位及其与黏膜免疫系统的相互作用,重点阐述黏膜免疫系统及肠道菌群/益生菌对食物过敏的关键调控机制,为海产品过敏的预防与治疗提供一些理论依据。
Seafood allergy, one of the most common food allergies, has been raising both public health and economic concerns worldwide, leading to imbalance and disorders of intestinal mucosal immune system. In this review, the epitopes of major seafood allergens and crosstalk to mucosal immune system are discussed. Furthermore, the regulation of food allergic response by mucosal immunity and microbiota/probiotics is mainly elucidated, which might contribute to better understanding of prevention and control of seafood allergy.
