摘要 随着人们越来越多地关注烹饪美学,烹饪工艺美术和菜肴制作的统一,已经完全融入了现代饮食业的潮流。厨师的厨房技巧和能力水平直接决定了企业的自身发展是否稳步正常。笔者从烹饪工艺美术设计能力的培养作为出发点,结合学生特点,实现实践与教学无间隔,对学生烹饪工艺美术设计能力的生成与培养进行研究。 As people pay more and more attention to the cooking aesthetics, the unification of cooking arts and crafts and dishes has been fully integrated into the trend of the modern food industry. Chef's kitchen skills and ability directly determines whether the enterprise's own development can be steady. The author takes the cooking art design ability of the training as a starting point, combined with the characteristics of students to achieve practice and teaching without separation and does a research on the students' design ability of the formation and development of the culinary arts and crafts.
