山东沿海地市养殖刺参(Apostichopus japonicus)中DDTs残留及其风险评价

摘要 利用超声提取–气相色谱法检测分析了山东省沿海7地市养殖刺参中DDTs残留水平,并采用食品安全状态指数和危害残留物的风险系数评价了其潜在风险。采集的89个刺参样品中DDTs含量范围为N.D.~82.4μg/kg(以湿质量计),均低于中国的农药残留限量(GB 2763—2014《食品安全国家标准食品中农药最大残留限量》),亦低于欧盟、日本等发达国家的最大残留限量。通过计算食品安全状态指数和危害残留物的风险系数,确定了刺参中DDTs残留为可接受风险。本研究可为深入开展刺参食品安全性预警工作提供基础资料。 The DDTs residues in cultured Apostichopus japonicas from seven coastal cities in Shandong province were investigated in 2014. Food safety indexes and risk coefficient were used to evaluate the potential risk of the DDTs residues. DDTs in Apostichopus japonicas were extracted with acetone in ultrasonic bath and analyzed by gas chromatography. The DDTs residues of 89 Apostichopus japonicas samples were determined in the range of N. D. ~ 82. 4 μg / kg( in wet weight). All of DDTs residues in samples were lower than the limits of our country standard( GB 2763—2014 Standard of National Food Safety in Food Pesticide Maximum Residue Limits) and also below the maximum residue limit of the European Union,Japan and other developed countries. According to the evaluation results of food safety indexes and risk coefficient,the DDTs residue was acceptable in cultured Apostichopus japonicas in Shandong province. This paper provided basic data for further studies of the early warnings of Apostichopus japonicas food safety.
