上海市星级酒店HACCP体系应用状况调查分析 被引量:4

摘要 采用调查问卷的方式,对上海市星级酒店的HACCP体系应用状况进行抽查调研,并对调查结果进行数据统计和分析。结果表明,上海市星级酒店的食品安全状况总体良好,但在食品安全方面存在亟待改善的问题。建议上海市星级酒店增加对原料基地的考察频率、增加食品标签使用频率、注重食物保藏环节、提高标准化食谱使用频率、加强对员工的培训、广泛推行HACCP等食品安全体系,以期保证酒店餐饮食品安全,提高星级酒店服务质量。 Application status of HACCP system in star hotels of Shanghai City was researched by the method of questionnaire survey. The data of investigation results were analyzed. Results showed that food security status of these star hotels was generally good,but there were still some problems needed to be solved. Suggestions were put forward,such as enhancing the inspection frequency of raw material bases,increasing the use frequency of food label,paying attention to food storage,improving the use frequency of standardized recipes,strengthening the training of employees,and promoting the HACCP and other food security system. Based on these,we can ensure the food security of hotel catering,and enhance the service quality of star hotel.
