摘要
麦芽糖醇是麦芽糖经氢化还原而制得的一种双糖醇。介绍了麦芽糖醇的反应机理及生产工艺流程,并经过实践证明,采用双酶法生产麦芽糖醇,可使麦芽糖醇干基含量达到78.1%。
Maltitol is a disaccharide alcohol malt sugar produced byhydrogenation.The reaction mechanism of maltitol and production process are introduced, and it is proved through practice, the production of malt sugar al-cohol by double enzyme method, can make the malt sugar alcohol base contentreached 78.1%.
