儿茶素类化合物抗氧化评价方法及作用机制的研究现状 被引量:21

摘要 在正常的生命过程中,自由基为维持生命所必需。体内自由基不断产生,也不断地被清除,使之维持在一个正常的生理水平上。自由基在生物体内参与吞噬病原体、部分生化反应以及调节细胞增殖与分化等重要的生理过程。但过量的自由基会损伤DNA,改变蛋白质结构,使蛋白质失去生理功能和诱发疾病。机体内的自由基清除系统和自然界中的抗氧化剂在保护机体免受氧化损害中起重要作用。儿茶素类化合物广泛存在于茶叶等植物中,是活性显著的抗氧化剂。近年来,关于儿茶素类化合物抗氧化能力评价和机制的研究很多,但不同的评价方法,由于其原理和方法的不同,得到的结果不尽相同。为此,综述儿茶素类化合物抗氧化评价方法和酚类化合物抗氧化机制的研究现状,旨在为儿茶素的应用提供有益的参考。 Free radicals are necessary for life. Since free radicals are constantly generated and constantly scavenged in organism,they can be maintained at an average physiological level. Free radicals play an important role in a number of biological processes such as engulfing pathogens, involving in biochemical reactions and regulating cell proliferation and differentiation. However,excessive free radicals are injurious to DNA and proteins,and can induce diseases. The anti- oxidation system in vivo together with the natural antioxidants protects the body against oxidative damage.Catechins found widely in tea plants have potent anti- oxidative activity, which have been seriously concerned. Many researches have been done in recent years concerning the effects and anti- oxidative mechanism of catechins. However,the results varied for the evaluation methods were different. This article introduces the advances in the study of catechins from the aspect of the current commonly used anti- oxidative evaluation methods and their anti- oxidative mechanism of catechins. It is aimed to provide beneficial reference to the application of catechins.
