摘要
葡萄酒泥是葡萄酒酿造的主要副产物之一,积极开展葡萄酒泥综合利用的研究具有十分重要的意义。本文主要介绍近年来葡萄酒泥综合利用的最新研究进展。同时,因酒泥成分复杂,对于酒泥中成分的开发提取方法还有待于进一步研究优化。
Wine lees are one of the main byproducts of wine brewing. It＇s of great impor- tance to research the comprehensive utilization of w^ne lees. The paper mainly reviews the latest advances in the utilization of wine lees. But the extraction method needs to be optimized be- cause of the complex ingredients of wine lees.
