摘要
香菇是我国最重要的食用菌,生产规模呈不断增长的趋势。香菇菌棒转色是生产中较独特的环节,菌棒转色的好坏直接影响香菇生产的质量和产量。为深入研究香菇菌棒转色技术,优化香菇栽培技术,提高生产效率,也为香菇优质菌种的研究提供数据支持,从香菇菌棒转色期生理生化特性、转色的作用与方式、转色的条件控制与品种要求和影响因素等方面对香菇菌棒转色及影响因素的研究进行综述,指出了今后研究的方向。
L.edodes is the most important edible fungus in our country,the production scale is growing continuously.In mushroom production color-turning is a unique link,rod bacteria turn color quality can directly affect the mushroom production quality and yield.To deeply explore the color-turning technique,optimize the cultivation technology,enhance the productivity and provide data support for highquality mushroom strain research,a comprehensive review was proposed from aspects of L.edodes colorturning and mechanism,physiological and biochemical characteristics during color-turning period,colorturning conditions and control requirements,factors influencing color-turning.The future research direction is pointed out.
