摘要
夏季绿茶在一年三季生产中品质是最差的,茶叶滋味苦涩,这是目前茶叶产区夏茶大部分停产的主要原因。为了提高茶叶生产效益,寻找提高夏茶品质的有效措施。本文分析了形成夏茶苦涩味品质的主要成因,通过综述前人的研究成果,探讨出一系列降低夏季绿茶苦涩味的方法,用以改善夏茶品质,提高茶叶经济效益。
Green tea produced in season from late spring to fall has low quality with bitter and astringent taste,especially the summer tea. This is the reason why the farmers did not harvest the suumer tea. The present paper analyzed the main causes leading to the formation of bitter taste of summer tea.Methods for reducing the bitterness of summer green tea were also discussed.
