摘要
综述了金属螯合肽的来源、分离纯化及构效关系,分析了金属螯合肽抗氧化活性的相关研究进展,并展望了金属螯合肽的发展前景。
The paper reviewed research progress of the preparation procedure of metal chelating peptide,such as sources,separating and purifying techniques,structural function relationship and antioxidant activity. The future development of metal chelating peptides were also prospected.
