摘要
为了更好地开发利用广西丰富的野菜资源,丰富和弘扬特色饮食文化,促进文化资源产业化,在实地调查和查阅相关文献的基础上,对广西常见野菜的种类、分布、食用部位、食用方法、食用文化和食用历史进行了研究。结果发现,目前人们对野菜资源的开发利用研究较多,但从野菜食用文化和食用历史角度出发,兼顾各地居民饮食文化和饮食习惯进行野菜资源开发利用的研究较少;对野菜营养成分、食用价值研究较多,但对野菜食用安全的研究重视不够;对野菜种质资源及其保护研究较多,但对野菜食用推广的研究较少,导致某些可食用野菜在很多地区不能充分利用,因而造成资源浪费。针对广西野菜资源研究与开发利用中存在的不足之处,提出了相应的建议和对策。
In order to develop and utilize the rich resources of potherb in Guangxi, to enrich and carry forward the feature food culture, and to promote the cultural resources industrialization, species, distribution, edible parts, eating methods, eating culture and edible history of the common wild vegetables in Guangxi were preliminary investigated on the basis of field survey and literature retrieval. The result showed that at present, much attention was paid to the development and utilization of wild vegetable than that of food culture and eating habits, especially, taking food culture and eating habit of the local people into account from the view of eating culture and edible history of wild vegetable. Also, much attention was paid to nutrient component and food value of the wild vegetables, but research on safe edibility of the potherbs was inadequate. Moreover, the research on germplasm resources of wild vegetable and its protection were focused on by the people, but the study on edible promotion of wild vegetable was not paid much attention to.So, some edible wild plants cannot be used fully in many areas, and it results in the waste of resources. According to the problems,some countermeasures and suggestions related were proposed.
