摘要
喷射蒸煮技术是近年来在食品加工领域热点应用的新技术之一。本文综述了喷射蒸煮技术在植物蛋白加工中的应用现状,分析了喷射蒸煮技术在植物蛋白加工中存在的问题及今后的主要发展方向。
In recent years, jet cooking technology is one of the hot spots in food processing. The paper reviewed applications of jet cooking technology in plant proteins processing. Moreover, the technical issues and the major development trends of the technology were analyzed and presented.
