摘要
选取二苯代苦味酰基自由基(DPPH·)、羟自由基(·OH)两种自由基体系和三价铁离子还原体系,研究鲤鱼鱼鳞胶原蛋白肽的抗氧化活性。结果显示,鲤鱼鱼鳞胶原蛋白肽的还原能力、清除DPPH·和·OH的能力随其质量浓度的增加而增强,且在一定质量浓度范围内具有量效关系。质量浓度为10mg/mL时,鲤鱼鱼鳞胶原蛋白肽的还原能力是VC的75.64%。鲤鱼鱼鳞胶原蛋白肽对DPPH·和·OH的IC50值分别为18.24mg/mL和12.11mg/mL,表现出良好的抗氧化能力。
Antioxidant activities of collagen peptides from cyprinoid scale was studied by two kinds of free radical system of DPPH · and · OH,and the ferric ion reduction system. The results showed that the reducing power,DPPH · and · OH scavenging ability of cyprinoid scale collagen peptides enhanced with the increasing concentration, and ranged with a dose effect relationship in a certain concentration. The reduction ability of cyprinoid scale collagen peptides is 75.64% of VC under the same concentration of 10 mg/mL,while its IC50 value on DPPH · and · OH were 18.24 mg/mL and 12.11 mg/mL respectively. All the results suggested that the cyprinoid scale collagen peptides had good antioxidant capacity.
