摘要
本文主要研究了壳聚糖澄清剂在蓝莓冰酒中的应用。在试验中通过与皂土澄清剂和明胶澄清剂作用效果的比较。确定了壳聚糖澄清剂的澄清效果好于皂土澄清剂和明胶澄清剂,并确定了壳聚糖澄清剂的最佳用量为1000mg/l。
The paper studies the application of the chitosan clarifier to blueberry icewine. In the study,a comparison is made between the effect of the clarifier and that of other two clarifiers,bentonite and glutin,in a test. The result indicates that the former one is better than the other two in clarification,and the optimal amount is 1000 mg /l.
