摘要
目的:对全蝎粉发酵前后水溶性活性物质的含量进行比较。方法:全蝎粉、发酵全蝎粉经过超声水提,分别采用改良Lowry法测定蛋白质的含量、苯酚-硫酸法测定多糖的含量、磷测定法测定磷的含量进而计算出核酸的含量。结果 :全蝎粉发酵前蛋白含量为136.332 mg·g^(-1),发酵后33.885 mg·g^(-1);全蝎粉发酵前多糖含量为5.832 mg·g^(-1),发酵后为12.024 mg·g^(-1);而全蝎粉发酵前核酸含量为24.789 mg·g^(-1),发酵后为58.034 mg·g^(-1)。结论:全蝎发酵前的蛋白含量较高,而全蝎发酵后的多糖和核酸含量较高。
Objective:To compare the contents of water- soluble active substances from the fermented and non- fermented scorpion powders. Methods:Through ultrasonic- assisted extraction,the contents of water- soluble active substance from fermented and non- fermented scorpion powder were measured with improved Lowry protein assay to determine the protein content,phenol- sulfuric acid method to determine the polysaccharide content,phosphorus assay to determine phosphorus content and to determine nucleotides content by calculation.Results:The protein content of the non- fermented scorpion powders was 136.332 mg/g,and the fermented was33.885 mg·g^(-1);the polysaccharides content of the non- fermented scorpion powder was 5.832 mg·g^(-1), and the fermented was 12.024 mg·g^(-1);the nucleic acid content of the non- fermented scorpion powder was 24.789 mg·g^(-1),and the fermented was 58.034 mg·g^(-1). Conclusion:The protein content of the non- fermented scorpion powder was higher and the polysaccharide and nucleic acid contents of the fermented scorpion powders was higher.
