Advances in Processing Technologies of Improving Summer-Autumn Black Tea Quality

用夏秋茶原料制作红茶,既能满足日益增长的红茶消费需求,又能促进夏秋茶生产,提高茶叶生产整体效益。总结了近年来国内利用茶叶加工技术萎凋、揉捻、发酵、干燥等方法提高夏秋红茶品质的研究进展,概括了提高夏秋红茶品质的加工方法和技术。

Using summer and autumn fresh leaves as raw materials to produce black tea can not only meet the growing demands of consumption in black tea, but also promote the summer-autumn tea production and enhance the overall benefits of tea production. In this paper, we reviewed studies on the processing methods of improving the quality of summer-autumn black tea in recent years in China, including withering, rolling, fermentation, drying, etc., and summarized processing methods and technologies for the improvement of summer-autumn black tea quality.
