摘要 农产品质量安全一直都是国内外研究的热点,食用菌是农产品中的第六大类,消费者也比较关注食用菌的质量安全问题,食用菌很容易受到重金属以及微生物的污染,而且经常会出现农药残留的现象,对食用菌质量安全进行风险评价研究可以发现食用菌易出现的质量安全问题并且提出控制措施,保证食用菌质量安全.从农产品质量安全、食用菌质量安全、农产品质量安全风险评价三个方面进行分析评述. Agricultural product quality and safety has always been a research hotspot at home and abroad,edible fungus is the sixth largest class in agricultural products,consumers are more concerned about the quality and safety of edible fungus,edible fungus is easy to be contaminated with heavy metal and microbe,and often will appear the phenomenon of pesticide residue,the study on risk assessment of edible fungi quality safety can find that the quality of edible fungi susceptible to security problems and make control measures to ensure the quality and safety of edible fungus. This paper from the quality and safety of agricultural products,the quality and safety of edible fungus,the risk assessment of agricultural product quality and safety were reviewed.
