摘要 通过预实验发现酸溶液对优化罗非鱼皮水发工艺有一定作用,在单因素实验基础上,选取酸浓度、酸处理时间、酸处理温度为自变量,以罗非鱼皮感官评分、出品率为响应值,采用Box-Behnken中心组合设计优化得到罗非鱼皮酸处理的最佳条件为:酸浓度1.5%、酸处理时间13h、酸处理温度20℃。在此条件下,鱼皮感官评分4.7、出品率为331%,与理论感官评分4.72054、出品率332.175%相比,较为接近,说明通过响应面优化得出的回归方程对鱼皮水发工艺具有一定的实践指导意义。再通过扫描电镜对比不同试剂对罗非鱼皮表皮结构的影响。 It was found that acid solution had a role in optimizing water- soaked process of tilapia skin through pre- experiment. On the basis of single factor experiment,the acid concentration,acid treatment time,acid treatment temperature were selected as independent variables,and sensory evaluation and yield of tilapia skin were taken as response value were respond value. The best conditions for acid treatment of tilapia skin were obtained by Box- Behnken central composite design optimization. The best conditions were the acid concentration of 1. 5%,acid treatment time of 13 h,and the acid treatment temperature of 20℃. Under the conditions,the sensory scored of skin was 4. 7,and production rate was331%. Compared to theoretic sensory score of 4. 72054 and the production rate of 332. 175%,it was relatively closer. It showed that regression equation obtained by the response surface had some practical significance to tilapia skin water- soaked process. Through scanning electron microscope,the effects of different reagents on the structure of tilapia skin were compared.
