摘要
彩色马铃薯富含花青素,花青素具有多种药理作用。本文通过检索大量科学文献,从花青素的结构特点、提取方法、稳定性及抗氧化性能四个方面论述了彩色马铃薯中花青素的研究进展,为进一步研究、开发、利用花青素提供理论支持和技术指导。
Color potatoes contains rich anthocyanin. Anthocyanin has many pharmacological effects. Through a large number of scientific literature search, this paper discusses the research progress of anthocyanin from four aspects about the structure characteristics, extraction method, stability and oxidation resistance of anthocyanins. All of this work provide theoretical support and technical guidance for the further research, development and utilization of anthocyanins .
