摘要
综述了糙米中活性物质在人体肠道内的代谢机制、不同糙米中的生物活性物质、地域和加工对糙米营养成分的影响。通过有关糙米的营养学研究,发现糙米不仅可以预防糖尿病及其引发的心血管疾病和肥胖症,也可改善糖尿病患者的健康状况以及治疗其它慢性疾病。糙米对人体健康的研究有着极其重要的意义。
This article reviewed the metabolic mechanism of bioactive substances in brown rice in the human gut,the bioactive substances in different brown rice and the effects of processing on nutrient composition of them. With the animal experiments and human studies on brown rice,the results showed that brown rice not only could prevent the diabetes and related cardiovascular disease and obesity,also could improve diabetes patients' health status and treat other chronic diseases. Brown rice had a significantly positive effect on human health.
