摘要 甜味剂因高甜度、低热能的特点,受到了糖尿病人、肥胖人群的关注。基于此,详细介绍甜味剂的组成及分类,以及食品中甜味剂的前处理及检测方法。 Because of the characteristics of high sweetness and low calorie, the sweeteners are concerned by people with diabetes and obesity. Based on this, this paper particularly introduced the composition and classification of sweeteners, as well as the pre-treatment and detection methods of sweeteners in food.
