我国陇南地区初榨橄榄油多酚类化合物组成研究 被引量:17

Polyphenols composition of virgin olive oils in Longnan district in China

摘要 研究了我国陇南地区鄂植8、城固32、皮削利、莱星、佛奥、阿贝奎纳、皮瓜尔和奇迹8个品种初榨橄榄油的总酚、邻二酚含量以及多酚类化合物组成。结果表明:8个品种初榨橄榄油中总酚含量在(57.20±5.56)mg GAE/kg(佛奥)与(260.03±7.52)mg GAE/kg(莱星)之间,平均为153.01mg GAE/kg;邻二酚含量最高的为皮削利((118.02±8.38)mg GAE/kg)和城固32((104.06±2.67)mg GAE/kg),而含量最低的为佛奥,为(20.70±2.90)mg GAE/kg;初榨橄榄油中多酚类化合物包括酚酸(香草酸、对香豆酸、阿魏酸、肉桂酸)、酚醇(羟基酪醇、酪醇、松脂醇)、酚醛(香兰素)、裂环烯醚萜(橄榄苦苷、Oleuropein aglycon、Ligstroside aglycon)和黄酮(木犀草素、甲基木犀草素、芹菜素),橄榄苦苷衍生物是初榨橄榄油中主要的多酚类化合物。 The contents of total phenols and pyrocatechol and polyphenols composition of virgin olive oils( eight varieties including Ezhi 8,Chenggu 32,Picholine,Leccine,Frantoio,Arbequina,Picual and Koroneiki) in Longnan district in China were studied. The results showed that the content of total phenols in eight varieties of virgin olive oils was( 57. 20 ± 5. 56)( Frantoio)-( 260. 03 ± 7. 52) mg GAE / kg( Leccine),and the average value was 153. 01 mg GAE / kg. The content of pyrocatechol in Picholine virgin olive oil was the highest(( 118. 02 ± 8. 38) mg GAE / kg),followed by Chenggu 32(( 104. 06 ± 2. 67)mg GAE / kg),while the content of pyrocatechol in Frantoio virgin olive oil was the lowest(( 20. 70 ±2. 90) mg GAE / kg). Polyphenols in virgin olive oil were composed of phenolic acids( vanillic acid,p- coumaric acid,ferulic acid and cinnamic acid),phenolic alcohols( hydroxytyrosol,tyrosol and pinoresinol),phenolic aldehyde( vanillin),secoroid( oleuropein,Oleuropein aglycon and Ligstroside aglycon) and flavonoids( luteolin,methyl luteolin and apigenin). Oleuropein derivatives were the primary polyphenols in virgin olive oil.
