摘要
食品中脂肪含量的测定是食品质量管理的一项重要工作,是评价产品品质,组织生产的重要依据。文章对脂肪测定的两种方法做了详细的阐述、对比,并对目前的一些改进方法做了介绍,以期对食品脂肪的检测工作有所帮助。
Determination of fat content is an important task in food quality management, and it is an important basis for the evaluation of product quality and the organization of production. In the paper, the writer elaborates and compares two fat determination methods, and also introduces some improvements, and hopes that it will be useful for the fat determination in foods.
