摘要
实验以阳江豆豉为原料,采用水提醇沉法提取豆豉中的多糖,以多糖提取率为考察指标,在单因素试验基础上,利用正交试验优化最佳提取工艺,其最佳工艺条件为提取温度90℃,提取时间2.5h,液固比8,此工艺条件下多糖提取率达9.53%,在最优工艺条件下提取的豆豉多糖的糖含量为89.12%。该工艺经济、可行性强,可为阳江豆豉多糖的提取提供理论参考。
Use Yangjiang Douchi as raw material,the optimization of extraction process is studied in this paper.With water extract-alcohol precipitation method,the yield of polysaccharide is selected as evaluation index;orthogonal experiment based on single-factor experiment is applied to optimize the extraction conditions of polysaccharide.As a result,the optimum conditions are extracting temperature of90 ℃,extracting time of 2.5hand the ratio of water to raw material of 8.Under such conditions,a maximal yield of 9.53% is obtained,and the content of polysaccharide is 89.12%.The optimizing extraction process is economical and feasible,which would provide the theoretical basis and reference for the industrial production.
