摘要
在不同水分含量(12%、13%、14%),不同储藏温度(15℃、22℃、30℃)及不同储藏气体成分(氮气、真空、空气)条件下建立正交试验模拟储藏,研究燕麦品质随储藏时间的变化规律,并借助SPSS软件对数据进行方差分析。结果表明:随着储藏时间的延长,燕麦的电导率、丙二醛含量及脂肪酸值均逐渐升高;燕麦含水量、储藏温度、储藏气体成分及储藏时间对燕麦电导率、丙二醛含量及脂肪酸值均有极显著影响,其对燕麦电导率的影响程度为:储藏时间>储藏温度>水分含量>储藏气体成分;对燕麦中丙二醛含量的影响程度为:储藏时间>水分含量>储藏温度>储藏气体成分;对脂肪酸值的影响程度为:储藏时间>水分含量>储藏气体成分>储藏温度。
Atmosphere storage could delay grain aging, keep the original nutrition components, and reduce the loss caused by harmful microbe. The present study was to investigate the quality change of oat under atmosphere storage. The orthogonal experiments were established to simulate storage for oat samples with different moisture contents (12% ,13% ,14% ),under different storage temperatures (15 ℃ ,22 ℃ ,30 ℃ )and different gas conditions (nitrogen, vacuum, air). The experiments data was processed by variance analysis based on SPSS software. The experiment results showed that: the electrical conductivity,MDA content and fatty acid value all increased with the extending of the storage time. The moisture content, storage temperature, storage gas conditions and storage time had significant effects on the electrical conductivity , MDA content and fatty acid value. The order of influence degree on the electrical conductivity was : storage time 〉 storage temperature 〉 moisture content 〉 storage gas conditions; the influence degree 'on the MDA content was:storage time 〉 moisture content 〉 storage temperature 〉 storage gas conditions;the influence degree on the fatty acid was: storage time 〉 moisture content 〉 storage temperature 〉 storage gas conditions.
