摘要
对常用于反式脂肪酸检测的区带毛细管电泳和胶束毛细管电动色谱技术的原理和特点进行了简要的介绍,并对食品中反式脂肪酸检测应用进行了综述。
The principle and characteristic of Capillary Zone Electrophoresis and Micellar Electrokinetic Chromatography were introduced and the application on detection of trans fatty acids in food was summarized.
