摘要
为了探究电子鼻技术对不同处理海棠果贮后常温货架期的判别能力,将海棠果冷藏120 d后做常温货架试验(0,3,6和9 d),分为对照、1μL/L 1-MCP与1μL/L 1-MCP结合800 mg/L纳他霉素3个处理,通过电子鼻PEN3系统动态采集得到海棠果芳香成分的响应值,并通过主成分分析(PCA),线性判别分析(LDA)以及载荷分析进行数据分析。结果表明,PCA和LDA方法均能将3种处理的海棠果在常温货架期分开,而LDA能更好地将货架期3和9 d的对照组与其他处理的海棠果分开。采用载荷分析方法得到第6,第7和第8号传感器在海棠果贮后常温货架期品质检测中起主要作用,其主要的挥发性物质为有乙醇,对硫化氢,甲烷类化合物。同时综合分析得到利用1-MCP结合纳他霉素处理略好于1-MCP单独处理,且都优于对照果。
The discriminatory power of electronic nose technology on crabapples with different treatments during ambient shelf life after cold storage was explored. The crabapples refrigerated shelf of 120 d after doing normal test(0, 3, 6 and 9 d) were divided into three processing groups: the control group, 1 μL/L 1-MCP and 1 μL/L 1-MCP combined with 800 mg/L natamycin. The aroma composition emanating from the crabapple fruit was sampled by PEN3 systems, and the response values of PEN3 was obtained. The data was analyzed using principal component analysis(PCA) and linear diserimination analysis(LDA) and load analysis, respectively. The results showed that the use of PCA, LDA was able to separate three kinds of treatments crabapples during ambient shelf life; however the use of LDA was able to better discriminate the control group on the shelf life of 3 d, 9 d from other treatments of crabapples. Meanwhile, it was indicated by loading analysis that the sensors 6th, 7th and 8th played important roles in the quality detection of crabapple fruit during ambient shelf life after cold storage, which mainly volatile substance was ethanol, hydrogen sulfide, methane compounds. At the same time it gave a comprehensive analysis of the use of 1-MCP in combination natamycin slightly better dealt with separately in 1-MCP, and was better than the controlled fruit.
