摘要
以干菠萝皮渣为原料,运用酸法提取菠萝皮渣中的果胶,通过单因素和正交实验,确定最优的提取工艺为:浸提时间90 min,浸提温度80℃,浸提液p H值1.5,料液比1:20,提取率为3.58%.理化分析可知:所提果胶的总半乳糖醛酸含量为69.36%,灰分含量为为3.68%,酸不溶灰分含量为0.79%,符合GB 25533-2010的规定.酯化度为46.3%,属于低酯果胶.
Extraction of pectin from dry powder of pineapple peels was conducted by using acid method. The extraction conditions were optimized by using single factor experiment and orthogonal array design. The optimal extraction conditions are as follows: Extraction time is 90 min; extraction temperature,80 ℃; PH,1.5; and the liquid-solid ratio,1 ∶20. Consequently the yield of pineapple peels pectin is 3.58%; GalA content of pineapple rind pectin,69.36%; ash content,3.68%; acid insoluble ash,0.79%; the esterification degree of the extraction,46.3%.
