电子鼻技术在葡萄酒气味检测中的应用 被引量:1

摘要 本文提出用电子鼻监控葡萄酒气味的新方法。通过电子鼻对不同葡萄酒样本的气味进行采集,利用自带软件主成分分析(PCA)对采集数据进行分析,通过不同样本间差异及同种样本内聚群效果分析,选取其中一款葡萄酒建立气味质控模型(SQC),并对气味质控模型进行应用。应用结果表明:质控模型能够从气味上控制葡萄酒的质量,识别其他品牌葡萄酒及不合格葡萄酒。
