摘要 [目的]宁波北沙牛是浙江省地方品种,是我国珍贵的黑毛黄牛资源。为掌握北沙牛肉质特性。[方法]本研究对保种场的北沙牛进行了屠宰测定和肌肉营养成分分析,[结果]表明:北沙牛的产肉性能良好,屠宰率、净肉率分别达到57.16%、48.15%;胴体质量较好,眼肌面积达89.76cm2;肌肉中水分含量较高(70.6%),粗蛋白含量较高(22.6%),粗脂肪含量中等(3.9%),总氨基酸含量为19.35%,呈味氨基酸含量高,[结论]可以作为南方地区开发优质牛肉生产的宝贵资源。 Beisha cattle is a local variety in Zhejiang province as well as the precious black hair cattle resource in our country.In this study,the slaughter determination and muscle nutrients were analyzed in the Beisha cattle.The results indicated that the meat production capability was fine.The dressing percentage and carcass meat percentage had reached to 57.16%and 48.15%,and the carcass quality was fine.Ribeye area of Beisha cattle was 89.76cm^2,and the water content of Beisha cattle beef was high(70.6%).Moreover,the content of crude protein was high(22.6%),and the content of crude fat was medium(3.9%).In addition,the content of amino acid was 19.35%,and the content of amino acid in taste was high.So,Beisha cattle can be used as a southern region development valuable resource to produce high quality beef.
