生鲜乳中皮革水解蛋白快速检测方法的建立 被引量:1

摘要 本研究依据卫生部指定的《乳与乳制品中动物水解蛋白鉴定方法》,对该方法的检测步骤和所用仪器进行了优化,建立了生鲜乳中皮革水解蛋白的酶标快速检测方法。试验结果表明,浓度在50~250μg/g范围内的阳性添加回收率为72.0%~89.2%;含量为100μg/g时的重复性验证的RSD值为2.9%。应用该方法对陕西省的11批生鲜乳与卫生部指定方法进行了比对试验,结果表明两种方法检测结果相同。与其他方法相比,该方法操作简单、成本低、污染少,检测速度快,适用于质检单位和乳品企业对生鲜乳中皮革水解蛋白的快速检测。 According to the ministry of health designated the appraisal methods of milk and dairy products of animal protein hydrolysate, This research was conduct for optimization of its testing steps and the instruments, in order to set up a enzyme label rapid detection method for leather hydrolyzed protein in fresh milk.Test results showed that the positive add recovery for the concentration scope of 50~250 ug/g was within 72.0%~89.2%. Content for 100 ug/g repetitive verification of RSD value was 2.9%. Comparing with the ministry of health designated method, totally 11 batchs of fresh milk in Shaanxi province were carried on the comparison test in application of the method. Results showed that the testing results of two methods were the same.Compared with other methods, the method was simple in operation and low cost, less pollution, fast detection. It is suitable for the rapid screening of leather hydrolyzed proteins in fresh milk for quality control unit and dairy enterprises.
