摘要
羊奶有"奶中之王"之称,营养价值很高。它不仅是羔羊出生后重要的食物来源,还在人类生活中占有重要的地位。近年来,国内外学者对山羊和绵羊奶成分进行了大量的研究,并且随着蛋白质组学技术的兴起,人们能够进一步对羊奶中蛋白质进行定性和定量研究。因此,本文对山羊和绵羊奶成分,以及山羊和绵羊奶中酪蛋白、乳清蛋白、乳脂球膜蛋白及初乳特点等进行综述,旨在为今后开展羊奶进一步研究提供参考。
The milk of goat and sheep is known as elite milk because of its high nutritional value. The milk produced by ewes is not only important food resource for lamb, but also plays an important role in human daily life. Up to date, domestic and overseas scientists have done numerous researches on milk composition in goat and sheep. Additionally, proteins in ewes' milk can be determined qualitatively and quantitativelyby using advanced proteomic technology. Therefore, this review is to summarize the progress of milk composition in sheep and goat milk, and of casein, whey protein, milk fat globule membrane protein and colostrum characteristics, in order to provide reference for further study on sheep and goat milk in the future.
