摘要
高光谱图像作为一种快速无损的分析技术在食品行业中得到广泛应用。高光谱图像是一种图像和光谱的融合技术,通过高光谱成像技术可以同时获取样品的空间和光谱信息。文章介绍了高光谱成像系统的原理以及在肉品品质和安全检测中的应用,主要包括肉类的化学组成成分分析、感官品质评价以及肉与肉制品的掺假物鉴别,并针对目前发展趋势展望了该技术在肉品品质及安全检测中存在的问题及应用前景,为更好地应用该技术提供参考。
As a novel rapid and non-destructive analysis technique, hyperspectral imaging system has been applied into food evaluation. Hyperspectral imaging is a novel technology which integrates conventional imaging and spectroscopy and can acquire both spectral and spatial information from an object simultaneously. In this paper, the fundamentals of hyperspectral imaging system and its application in evaluating the quality and safety of meat are introduced, especially the analysis of the chemical composition of meat, the evaluation of sensory quality and the adulterant identification for meat and meat products. In view of the development trend of this technology, the prospects and the problems existing in the technology are also discussed for better application in this respect.
