中熟粳稻稻米品质在品种更替过程中的变化 被引量:1

摘要 以江苏省粳稻品种更替过程中的典型品种为材料,研究了品种更替对粳稻米质的影响。结果表明,随着品种更替,稻米的整精米率提高,直链淀粉含量和蛋白质含量降低,RVA谱中的崩解值变大,消减值变小,说明稻米品质随着品种更替得以改善。 In the study, taking rice cultivars applied in the production in Jiangsu Province during the evolution of mid - season Japoni- ca rice as test materials. With the evolution of mid - season Japonica rice cuhivars, the head milled rice rate and breakdown values were increased, whereas the amylose content, protein content and setback values were decreased. The results suggest that grain quality is improved during the evolution of mid - seasom Japonica rice cultivars.
