摘要
高校酒店专业的餐饮管理课程实践教学中存在一定的不足,主要是实践学时安排、培养目标、实践教学信息化程度和校企合作程度等与本科人才培养存在一定的差距。文章从课内理论学习、校内创新实践、校外企业实践三个层面来构建餐饮管理课程的"三维一体"实践教学新体系,突出培养具有创新性的应用型餐饮人才,并提出了相应的对策。
Problems in the practical skill training part of the course Catering Management for Hotel Management students exist in the aspects of duration, objectives, IT level, and business-school cooperation. This paper sug- gests a three-dimensional model integrating in-class theoretical study, on-campus innovative practical skill training and practical skill training in businesses. Corresponding strategies are also put forward.
