摘要
漆酶在食品工业中的应用范围不断扩展,研究日渐深入。通过对该领域的众多成果进行整理,对漆酶在作为食品、饮料加工中的添加剂、测定饮料中某些化合物、食品工业废水处理等方面的重要作用进行了分类综述,展示了漆酶良好的发展前景。
The research and application of Laccase in food industry are becoming more and more extensive and deep. In this paper,the numerous achievements are collated on laccase as additives in food and beverage processing,determination of the certain compounds in beverage,food industry wastewater treatment,showing the good prospects for development of Laccase.
