荸荠功能活性成分研究进展

Research Progress in Active Ingredients of Chinese Water Chestnut

荸荠是我国的特产果品,不仅含有多种人体需要的营养成分,而且还富含多种生物活性物质,具有很高的营养价值和药用价值。通过综述荸荠中多糖、多酚、黄酮类化合物、甾醇、荸荠英等活性物质的研究进展,为开发具有高附加值的荸荠功能保健产品提供理论参考。

Chinese water chestnut is a specialty fruit in China. It is not only rich in various nutrients needed by the body,but also rich in variety of active ingredients, which has high nutritional value and medicinal value. In this atical, the active ingredients are extracted from Chinese water chestnut, such as flavonoids, polyphenols, polysaccharide and sterols are discussed. All of these studies will offer some theoretical reference for developing health products of Chinese water chestnut with high added value.
